SMEAR. We had to take it all apart and clean it up. this is why you want your meat really really cold.
Getting a bit messy…
See towards the bottom of the grinder die? they’re not coming out as perfect distinct little tubes of meat. They’re getting stuck together. That’s because of the previously mentioned error in meat cutting that I didn’t catch til we got to this point. We decide to push on and see if it will clear up.
Now it’s sausage! The very first bits through the grinder. So far it’s looking pretty good.
Ready to grind.
Really it’s going out side into the sub zero temps to get a bit closer to frozen though. Cold meat grinds better. So long as it’s not too frozen for your grinder to process, the colder the better.
